Fatty acids are the basic building blocks of lipids or fats. One of the ways fatty acids are classified is by the number of carbon atoms in their tails. Long-chain fatty acids are those with 14 or more carbons. They're found in most fats and oils, including olive oil, soybean oil, fish, nuts, avocado and meat.

Structure: All fatty acids share the same basic structure: One carboxyl group -- a carbon atom double-bonded to an oxygen atom and single-bonded to a hydrogen and oxygen compound -- attached to a chain of carbon atoms. The number of carbon atoms in this chain is almost always even and consists of at least four carbons and a maximum of 28. Long-chain fatty acids have at least 14 carbon atoms in their tails.

Saturated and Unsaturated: Fatty acids are further classified as saturated, monounsaturated or polyunsaturated, depending on the number of hydrogen bonds. With saturated fat molecules, 14 to 20 carbon tails are considered long-chain, while those with more than than 20 carbons are called "very-long-chain."
With unsaturated fats, a tail of up to 24 carbons is classified as long-chain. Very-long-chain unsaturated fatty acids are those with 25 or more carbons in their tails.
